Terroir
The Chablis of the property is the result of a blend of the nicest vines located in Béru area and respect the minerality of its
terroir.
Vineyard
The vines are approximately 20 years old. The pruning system is guyot double shape. 6000 vines are planted per hectare.
Since 2006, many changes have been implemented, beginning with a major improvement in the viticulture process:
conversion to organic viticulture, working the soils…

Vinification and Aging
The grapes are handpicked at maturity in 10kg crates. The harvest is directly pressed – in a pneumatic press at low
pressure. The musts are directly transferred to stainless steel tanks for alcoholic fermentations. The close attention brought
at each step of the winemaking process is the key element which allows for low sulphur vinification. Malolactic fermentation
lasted until summer. The cold weather at the end of winter contributes to the natural clarification of the wines.
The Chablis is aged until the Malolactic fermentation is over. It is then immediately bottled to preserve its freshness and its
minerality.
2009 vintage
The vintage 2009 was a very good year in Burgundy and Chablis in particular producing some very nice grapes, balanced
and golden. Chablis 2009 was marked by a beautiful mature roundness and delicacy, and an intense minerality, typical of the
terroirs of the appellation. It is also a wine of great intensity by the energy of our land.
